The Rhubarb Kiss Spritz, swapping Aperol or a Hugo Spritz for a sweet-tart blend of rhubarb and strawberries, both found in Krkonoše and Bohemian Paradise. Not only do they balance each other perfectly, but they're packed with vitamins and antioxidants—making them as healthy as they are delicious.

 

Try This Cocktail at Home: Rhubarb Kiss Spritz

This cocktail is a playful nod to fruity summer pies—sweet, tart, juicy, and aromatic. It brings together two of the season’s greatest pleasures: the taste of fresh fruit and the sparkle of bubbly wine. It’s built on a base of house-made strawberry and rhubarb juices, delivering a bright, sweet-tart freshness. Served over ice in a wine glass, finished with a light dusting of powdered freeze-dried strawberries, it’s summer in a sip.

Unsweetened Rhubarb syrup recipe

Add 1 kg chopped rhubarb stalks, 1.2 L water, and 100 ml lemon juice to a pot. Bring to a boil, stir, and simmer until the rhubarb breaks down. Skim off any foam. Remove from heat and stir in 5 g citric acid. Let cool, strain through a cloth, and bottle. Store chilled.

Strawberry syrup recipe

Combine 1 kg strawberries (fresh or frozen), 500 g sugar, 600 ml water, and 100 ml lemon juice in a pot. Bring to a boil and simmer gently for about 5 minutes. Skim off any foam. Remove from heat, stir in 5 g citric acid, let cool, strain through a cloth, and bottle. Store chilled.

 

Rhubarb Kiss Spritz Recipe

  • 40 ml rhubarb syrup
  • 40 ml strawberry syrup
  • Dry sparkling wine (ideally prosecco), to top
  • Garnish: powdered freeze-dried strawberries mixed with icing sugar

 

Rub the rim of a wine glass with a slice of lemon and gently dust it with the strawberry sugar mix. Add ice cubes, pour in the rhubarb and strawberry juices, and top with prosecco.

Use a white wine glass to serve your drink. This enhances the lightness and visual appeal of the spritz resulting in a sweet and tart cocktail with a fruity punch. You can taste the soft strawberry aroma from the homemade strawberry syrup with a refreshing sparkle from the bubbles.
